You really do have to admire a wine maker who labels one of his wines as simply: DGS. DGS? “Damn Good Shit” according to Bertie Eden, of Comte Cathare wines, from the Languedoc in south-western France. Mr Eden farms bio-dynamically, so the fruit from that Syrah or the zing from that 50/50 mix of Viognier and Marsanne comes from plenty of fresh cow and sheep manure.
